Healthy Stuffed Peppers

  • 1-2 TBSP Olive oil
  • 1/2 Cup Red onion Diced
  • 1 Pound Ground turkey Could sub ground chicken or beef
  • 1 TBSP Taco seasoning I used Trader Joe's brand
  • 1 1/4 Cup Sweet potato Diced
  • 15oz Can Black beans
  • 15oz Can Fire roasted tomatoes
  • 3-4 Bell peppers

Optional toppings

  • Greek yogurt
  • Cilantro
  • Lime juice


  • Drizzle olive oil onto pan and add diced red onion. Sauté 2-3 minutes.
  • Add ground turkey and taco seasoning, brown for 5-7 minutes.
  • Add in diced sweet potato and cook for another 5 minutes or until slightly fork tender.
  • Drain and rinse black beans. Add to your mixture along with fire roasted tomatoes.
  • Mix and sauté for another 2 minutes.
  • Cut bell peppers in half.
  • Stuff each bell pepper half with your mixture.
  • Bake at 400 for 20 minutes.
  • Top with Greek yogurt (or sour cream), cilantro, and a squeeze of lime juice. Feel free to add cheese as well.
