Drizzle olive oil onto pan and add diced red onion. Sauté 2-3 minutes.
Add ground turkey and taco seasoning, brown for 5-7 minutes.
Add in diced sweet potato and cook for another 5 minutes or until slightly fork tender.
Drain and rinse black beans. Add to your mixture along with fire roasted tomatoes.
Mix and sauté for another 2 minutes.
Cut bell peppers in half.
Stuff each bell pepper half with your mixture.
Bake at 400 for 20 minutes.
Top with Greek yogurt (or sour cream), cilantro, and a squeeze of lime juice. Feel free to add cheese as well.
