Two Ingredient Chocolate Frosting!
A simple two ingredient chocolate frosting with ingredients you probably have on hand! Are you ready?
I’m not kidding you when I say I was SHOCKED at how good this frosting was the first time I tried it. I’d been looking for a healthy option to top my homemade donuts, muffins, or cakes! I always shop dairy free, so when it came to frostings, my options were limited and expensive. I don’t know about you, but paying $5.99 for a jar of frosting can be painful.
This simple frosting is made with 2 ingredients: sweet potato and cacao powder. Can we just take a moment and think about what a POWERHOUSE couple this is? All the good fiber, vitamins and minerals from the sweet potato coupled with the antioxidants in cacao powder. This frosting packs a seriously dense nutrient punch.
What you’ll need:
1 medium to large sweet potato
¼ cup cacao powder (I used THIS)
Food processor (although I have a vitamix as well- I haven’t tried it in there. I’m sure it works just the same!)
How to prep the sweet potato:
1. Poke holes in your sweet potato all the way around, and wrap in foil.
2. Bake at 400 for about 1 hour. If your sweet potato isn’t “squishy” to the touch, bake for another 15 minutes. The longer it bakes, the sweeter it will get! Plus, it will be much easier to work with.
3. Let the potato rest and cool (still in foil) for 30 minutes.
Now onto the frosting…
- Unwrap the potato and take the skin off, it should easily peel away at this point.
- Place your sweet potato into the food processor with ¼ cup cacao powder and blend! I would say start with 45 seconds to 1 minute of blending before checking your consistency.
Okay, you’re ready to FROST! If you’re not frosting right away, store your frosting in a Tupperware container in the fridge.
Keep in mind anything frosted needs to be kept in the refrigerator… we are talking about a sweet potato here 😊 it cannot sit out overnight.
Here are some ways you can use this: top baked good like donuts, muffins, cakes, brownies, or blondies! I’ve also mixed this into plain Greek yogurt to make a fun and healthy “dessert”. How will you use this? Leave it in the comments!
