Peanut Butter Rice Krispie Treats
Where have peanut butter rice krispie treats been my whole life? HELLO dessert of the week right here! Truth be told, I had to test this one a couple of times. My first batch failed miserably. Fall apart in your hands type of fail. Definitely not sticky enough.
My final batch was just right and perfect for you to make! 5 minutes, 5 ingredients, let’s do it!
If you’ve made a classic Rice Krispie treat you’re probably thinking, “okay where are the marshmallows?” Not here my friends. We are going to stick these peanut butter rice krispie treats together with peanut butter (duh) and honey! I’ll pass on the corn syrup and modified cornstarch from your average bag of marshmallows…
Here’s what you’ll need:
- Brown Rice Cereal (I used this one)
- Natural Peanut Butter (I used Kirkland brand, best bang for your buck)
- Honey
- Coconut Oil
- Chocolate bar (I used lily’s stevia sweetened)
These seriously come together so quick once you’ve gathered all of the necessary ingredients. And watch out, these will fly off your table. They’re deliciously crunchy and perfectly sweet. If you have any nut free friends, I’m sure this recipe works with tahini! You could also sub for cashew butter, almond butter, etc!
As for the chocolate…
Now when it comes to the chocolate bar- that one is completely up to you! Feel free to use whatever you have on hand or omit all together. I love using Lily’s as it keeps the sugar low. When I am adding a sweetener like honey or maple syrup to a recipe, I try to keep my other ingredients low or free of sugar.
How to make peanut butter rice krispie treats:
- Heat your peanut butter and honey in a large pot over medium to low heat. Whisk often.
- Once melty, add your brown rice cereal. Stir to combine.
- Transfer into a large parchment lined dish (I used 8×8)
- Place coconut oil into a dish or pot with chocolate and heat or microwave. If you microwave, start with 30 second intervals. Melt.
- Drizzle over peanut butter rice krispie treats and let cool in the fridge for one hour!
Cut your treats into squares and enjoy. I prefer to store these in the fridge for ultimate crispiness!
