Healthy stuffed peppers full of flavor!
Healthy stuffed peppers are one of my go-to meals! They’re super flavorful, paleo friendly, and filling! I used simple ingredients for something easy to make. Follow these directions and you’ll have something delicious on the table in no time.
My stuffed peppers are made without rice and instead using sweet potato. It is such a fun texture and truly takes on all the flavor of the fire roasted tomatoes and taco seasoning. Adding extra veggies never tasted so good!
Healthy stuffed peppers are great to meal prep as well! You can make a big batch and enjoy throughout the week. The mixture would also be great to freeze and heat up when you’re ready.

Ingredients
- Olive oil
- Red onion
- Ground turkey
- Sweet potato
- Black beans
- Fire toasted tomatoes
- Bell peppers
- Taco seasoning
- Cilantro
- Optional toppings: Greek yogurt, cilantro
How to make healthy stuffed peppers
- Drizzle olive oil onto pan and add diced red onion. Sauté 2-3 minutes.
- Add ground turkey and taco seasoning, brown for 5-7 minutes.
- Add in diced sweet potato and cook for another 5 minutes or until slightly fork tender.
- Drain and rinse black beans. Add to your mixture along with fire roasted tomatoes.
- Mix and sauté for another 2-3 minutes.
- Cut bell peppers in half.
- Stuff each bell pepper half with your mixture.
- Bake at 400 for 20 minutes.
- Top with Greek yogurt (or sour cream) and cilantro. Feel free to add cheese as well.
How many does this recipe serve?
Healthy stuffed bell peppers will make ~4 full peppers (or 8 halves). I chose to make 3 full peppers (6 halves) and use some of the extra mixture to eat with crackers, inside a tortilla (I love these or these), or by itself!

- 1/2 Cup Red onion Diced
- 1 Pound Ground turkey Could sub ground chicken or beef
- 1 TBSP Taco seasoning I used Trader Joe's brand
- 1 1/4 Cup Sweet potato Diced
- 15oz Can Black beans
- 15oz Can Fire roasted tomatoes
- 3-4 Bell peppers
Optional toppings
- Greek yogurt
- Cilantro
- Lime juice
