
Oh yes- it’s SNACK TIME! Everything but the bagel sweet potatoes are on the menu! I ate the entire batch within 24 hours. My obsession with sweet potatoes met everything but the bagel seasoning and it was a match made in heaven! Make these everything but the bagel sweet potatoes for your next snack or side, you won’t be disappointed!
So why sweet potatoes vs a regular old russet potato? Well, I’m all about that fiber and sweet potatoes are known to be a great source! Fiber helps keep you FULL which is key when you’re in for a snack. Have you ever had a snack and felt like you physically can’t stop eating , not to mention you aren’t even full? Yep- add more fiber! I decided to make my everything but the bagel sweet potatoes as coins, but you could make them into wedges, fries, or even cube them up! Use a quality knife or mandolin to get a coin shape. A mandolin would also be helpful if you wanted to give them more of a “chip like” crunch, slices super thin!
Ingredients you need:
Sweet Potatoes (I used 2 medium)
Avocado oil
Avocado oil spray (or other cooking spray)
Everything But The Bagel seasoning
The ingredient list is pretty slim and you may already have the ingredients on hand. I buy my EBTB seasoning at Trader Joe’s or Costco. I also like using avocado oil since it has a higher smoke point- you can read more about that here.
How to:
1. Slice your sweet potato into desired shapes. Mine are small rounds or “coins”.
2. Toss in 1-2 TBSP of avocado oil depending on how big your potato is.
3. Add a pinch of salt and pepper to you mixture and toss again.
4. Lay them out evenly on parchment paper, give them room to breathe!
5. Spray the coins with cooking spray and sprinkle each with EBTB seasoning.
6. Put into a 400 oven for 20 minutes.
7. Remove, flip, and repeat step 5.
8. Put them back in for another 20 minutes.
9. After 40 minutes total, remove and let cool. Enjoy!

- 1-2 Sweet Potatoes I used 1-2 medium sized sweet potatoes
- 2 TBSP Olive Oil
- Everything but the bagel seasoning
- Salt & Pepper

Instructions
