
If you’re a “eat the dough” type of person like me, these chickpea cookie dough bites will rock your world! Chickpea cookie dough bites are made of 2 main ingredients, chickpeas and peanut butter. Stick with me here, they are so good! Combining chickpeas with peanut butter in your food processor gives the perfect cookie dough texture you can feel good about eating. Not a peanut butter fan? Feel free to substitute for your favorite nut butter such as almond or cashew.
I wanted these bites to be easy to make with ingredients you already have in your kitchen. Check and check. Chickpea cookie dough bites have 6 total ingredients and can be whipped up in no time. I’m currently using them as an after lunch dessert and they are PERFECT. (Please tell me I’m not alone in a “lunch dessert”)
Ingredients in Chickpea Cookie Dough Bites:
- Chickpeas
- Peanut Butter
- Maple Syrup
- Vanilla
- Salt
- Chocolate Chips
The recipe below calls for 2 TBSP of maple syrup to achieve a “lightly sweet” flavor. If you prefer a stronger sweetness, feel free to add 1-2 TBSP additional.
How to make Chickpea Cookie Dough Bites:
The how-to of these is pretty simple but will require one kitchen tool, a food processor. This one can be found on amazon and is under $50! It is worth the investment- I use mine a couple times per week! Okay now you’re ready to go.
- Drain, rinse and dry chickpeas. This is super important as you don’t want the chickpea liquid in your mix.
- Add chickpeas, peanut butter and maple syrup to your food processor.
- Turn your processor on and allow it to mix together for ~1 minute!
- Add in vanilla and salt, mix again.
- Take out the blade and add in chocolate chips (you could also transfer mixture to a bowl and add chips there if you prefer).
- Roll your mixture into bites, lay on parchment paper and set in the fridge for 30 minutes!
- Either enjoy immediately or continue to store in the fridge.
- I usually take 1/2 the batch and keep them in the freezer. You can defrost for 20-30 mins on the counter before eating.
Why are these a better dessert option?
- You are using CHICKPEAS! Chickpeas are full of fiber and protein! These help keep you full, and regulate blood sugar.
- Healthy fats from peanut butter! Healthy fats also help keep you full because they take longer to digest. Our brain is also 60% fat, hello brain food!
- Adding less sugar. Although maple syrup is still sugar, this recipe only calls for 2 TBSP!

- 1/3 Cup Peanut Butter
- 2 TBSP Maple Syrup
- 1 TSP Vanilla
- 1/4 TSP Salt
