Weather channel called for 8 inches of snow last n Weather channel called for 8 inches of snow last night and we maybe got 4 🤷🏽‍♀️ Still a day that calls for cozying up with SOUP though! This soup is so warming and nutrient dense, you'll want to save for later.⁣
⁣⁣
You need:⁣⁣
1/2 onion⁣⁣
2 TBSP garlic⁣⁣
3 ribs celery⁣⁣
2 C carrot⁣⁣
1 C parsnip⁣⁣
1/2 tsp onion powder⁣⁣
1/2 tsp garlic powder⁣⁣
1 TBSP lemon juice⁣⁣
7 C bone broth ⁣⁣
1 C water⁣⁣
Chicken (optional)⁣⁣
Noodles (optional)⁣⁣
⁣⁣
How to: SAUTE onion and garlic until fragrant. ⁣
ADD veggies and sauté 4-5 minutes. ⁣
Add LIQUID and seasonings and bring to a boil. Make sure veggies are somewhat soft and reduce to a covered simmer for 20 minutes. ⁣
⁣ADD chicken and cooked noodles in at the end if you're adding them and let simmer for another 5 minutes.  Top with parsley!⁣

CAKE BATTER BITES- makes 8⁣
½ Cup Almond Butter⁣
2 TBSP Maple Syrup⁣
1 TBSP Coconut Milk⁣
¼ TSP Almond Extract⁣
¼ TSP Vanilla Extract⁣
½ Cup Almond Flour⁣
1/8 TSP Salt Or just a pinch⁣
Sprinkles⁣
⁣
- Add almond butter, maple syrup, coconut milk, vanilla and almond extract to a bowl.⁣
- Mix until well combined.⁣
- Next, add in almond flour and salt.⁣
- Mix until a dough begins to form.⁣
- Fold in sprinkles.⁣
- Using a small cookie scoop or spoon, grab dough and roll into balls with your hands.⁣
- Set on parchment lined dish or baking sheet and freeze for 30 minutes.⁣
- Remove and enjoy! Store in the fridge or freezer.⁣

SWEET POTATO BREAKFAST BOWL 🙀❤️ I could eat SWEET POTATO BREAKFAST BOWL 🙀❤️ I could eat sweet potatoes day after day and never get tired of them, they’re so versatile! This recipe really brings out the natural sweetness by baking and swirling them up with cinnamon, vanilla and almond butter 🤤⁣

Make this recipe the day of or meal prep for a week of delicious breakfast that tastes like dessert! ⁣

1 Sweet Potato Small or medium. 8-10 oz⁣
2 TBSP Almond milk⁣

3 Bananas Mashed
1 Cup Rolled Oats 
1/4 Cup Ground Flaxseed
1/4 Cup Peanut Butter
1 TSP Vanilla Extract
1/2 TSP Cinnamon
1/4 TSP Salt
Chocolate Chips @letsbakebelieve 

MASH bananas and mix with the rest of the ingredients except chocolate chips. 
PLACE batter into a parchment lined loaf tin. 
TOP with chocolate chips and bake at 350 for 30 minutes.
Let them cool completely and cut into 8 bars!

CREAMY lemon garlic sauce!! This stuff is absolute CREAMY lemon garlic sauce!! This stuff is absolute HEAVEN. Completely vegan and pairs perfect with any pasta! Move on over marinara. I served it with sweet potato noodles here 🤤 save or find the recipe on my blog!

2 cups raw cashews
Juice of 2 lemons
3/4 cup almond milk (1 cup if you want a thinner consistency)
2 garlic cloves
1/4 tsp salt

short on time: boil water, let it cool for 2 minutes, add cashews and soak for 15 mins.

lots of time: cover cashews with water (room temp faucet) for 2-3 hours.

DRAIN cashews, add into food processor with all other ingredients.
PROCESS for ~2 minutes or until completely smooth. 
SERVE over noodles of choice! Perfect #plantbased lunch or dinner!

I had to test this one a couple of times. My first batch failed miserably. Fall apart in your hands type of fail.  My final batch was just right and perfect for you to make! ⁣
⁣
5 minutes, 5 ingredients, let’s do it!⁣
⁣⁣
3 cups brown rice cereal⁣⁣
3/4 cup PB⁣⁣
1/3 cup honey ⁣⁣
1 TBSP coconut oil⁣⁣
1/2 @lilys_sweets chocolate bar ⁣⁣
⁣⁣
HEAT your peanut butter and honey in a large pot over medium to low heat. Whisk often.⁣
Once MELTY, add your brown rice cereal. Stir to combine.⁣
TRANSFER into a large parchment lined dish (I used 8×8)⁣
Place coconut oil into a dish or pot with chocolate and heat or microwave. If you microwave, start with 30 second intervals. Melt.⁣
DRIZZLE over peanut butter rice krispie treats and let cool in the fridge for one hour!⁣

I store mine in the fridge! Save or find it on my blog by searching "rice krispie".
